Abstract: The objective of this work was to evaluate the physicochemical composition, the bioactive compounds, and the total antioxidant activity of the fruit pulps of abiu (Pouteria caimito), achachairu (Garcinia humilis), araza (Eugenia stipitata), bilimbi (Averrhoa bilimbi), and yellow mangosteen (Garcinia xanthochymus) from the Brazilian Amazon biome. Total soluble solid content, total and reducing sugar contents, titratable acidity contents, pH, ascorbic acid content, moisture, protein, lipid, ash, and caloric value were determined. The contents of total anthocyanins, yellow flavonoids, and total carotenoids, besides total phenolic compounds and antioxidant activity, were also evaluated. Mammee apple (Mammea americana L.) fruits are promising sources of various bioactive compounds such as carotenoids, vitamin C, and phenolic compounds, and offer great potential for use in agro-industrial processing and to meet the requirements desired for consumer health. The objective of this study was to evaluate physicochemical and sensory changes of mammee apple after syrup and jam processing. Fruits were washed, cut, pulped, blanched, and the pieces of fruit blanching were stored in 125 mL glass jars, and covered with 18 °Brix boiling sugar syrup. The mixture was pasteurized and cooled. Objetivou-se, neste trabalho, desenvolver e avaliar a estabilidade de licores de graviola acondicionados em embalagens de polietileno durante o armazenamento por 240 dias em condições ambientais. Foram elaboradas 5 formulações de licores variando-se as concentrações de polpa (300, 400 e 500 g) e xarope de sacarose (50, 60 e 70 °Brix). As polpas foram maceradas em álcool comercial por 20 dias; em seguida, as misturas foram filtradas, adicionadas de xarope e submetidas a um envelhecimento acelerado em banho-maria, a 60 °C, pelo período de 2 h. Pitaya is a fruit that is becoming promising for cultivation around the world due to the quality of its fruits in terms of taste and their peculiar external shape. Because it is a recenttly cultivated crop, information about fertilization is essential to enable its production. In this sense, this study was performed aiming to evaluate different doses of K2O for pitaya cultivation. Hylocereus undatus and Hylocereus polyrhizus were studied under field conditions.
