Composition, content of bioactive compounds, and antioxidant activity of fruit pulps from the Brazilian Amazon biome PAB

Abstract: The objective of this work was to evaluate the physicochemical composition, the bioactive compounds, and the total antioxidant activity of the fruit pulps of abiu (Pouteria caimito), achachairu (Garcinia humilis), araza (Eugenia stipitata), bilimbi (Averrhoa bilimbi), and yellow mangosteen (Garcinia xanthochymus) from the Brazilian Amazon biome. Total soluble solid content, total and reducing sugar contents, titratable acidity contents, pH, ascorbic acid content, moisture, protein, lipid, ash, and caloric value were determined. The contents of total anthocyanins, yellow flavonoids, and total carotenoids, besides total phenolic compounds and antioxidant activity, were also evaluated. Effect of processing on the physicochemical and sensory properties of mammee apple (Mammea americana L.) fruit Agrociencia

Mammee apple (Mammea americana L.) fruits are promising sources of various bioactive compounds such as carotenoids, vitamin C, and phenolic compounds, and offer great potential for use in agro-industrial processing and to meet the requirements desired for consumer health. The objective of this study was to evaluate physicochemical and sensory changes of mammee apple after syrup and jam processing. Fruits were washed, cut, pulped, blanched, and the pieces of fruit blanching were stored in 125 mL glass jars, and covered with 18 °Brix boiling sugar syrup. The mixture was pasteurized and cooled. Jam contained 50 % fruit, 50 % sugar, and 3 % pectin; sugar was added and the mixture boiled to a final concentration of 60 to 62 °Brix. The experimental design was...

Estabilidade física e química de licores de graviola durante o armazenamento em condições ambientais AGRIAMBI

Objetivou-se, neste trabalho, desenvolver e avaliar a estabilidade de licores de graviola acondicionados em embalagens de polietileno durante o armazenamento por 240 dias em condições ambientais. Foram elaboradas 5 formulações de licores variando-se as concentrações de polpa (300, 400 e 500 g) e xarope de sacarose (50, 60 e 70 °Brix). As polpas foram maceradas em álcool comercial por 20 dias; em seguida, as misturas foram filtradas, adicionadas de xarope e submetidas a um envelhecimento acelerado em banho-maria, a 60 °C, pelo período de 2 h. Os licores foram acondicionados em embalagens de polietileno de baixa densidade e armazenados em temperatura e umidade relativa médias de 26 °C e 78%, respectivamente. ABSTRACT The Achachairu (Garcinia humilis) is a Bolivian exotic fruit that has been produced and commercialized a few years in Brazil. Information about the production of high quality seedlings is essential for the implementation and the renewal of orchards. The objective was to evaluate protected environments and substrates for Achachairu seedlings. Two protected environments were evaluated, one covered with aluminized thermal reflector screen of 50% of shading and the other with Sombrite® of 50% of shading.
